Crispy Goldfish Chicken

- 1/4 teaspoon black pepper
- Cooking oil, for frying (you can also use Air Fryer)
Instructions:
- Preheat the Oil: In a large frying pan or deep fryer, heat cooking oil to 350°F (175°C). The oil should be at least 2 inches deep to ensure even frying.
- Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season each chicken breast with a pinch of salt and black pepper on both sides.
- Set Up the Dredging Station: In three separate shallow dishes, set up a dredging station. In the first dish, place the all-purpose flour. In the second dish, whisk together the eggs and milk until well combined. In the third dish, mix the crushed Goldfish crackers with paprika, garlic powder, onion powder, and salt. Stir to combine the spices evenly.
- Dredge the Chicken: Take one seasoned chicken breast and coat it thoroughly with flour on both sides, shaking off any excess. Then dip it into the egg and milk mixture, making sure it’s fully coated. Finally, press the chicken into the Goldfish cracker mixture, ensuring it is evenly covered with the crumbs. Repeat this process for each chicken breast.
- Fry the Chicken: Carefully place the coated chicken breasts into the preheated oil, ensuring not to overcrowd the pan. Fry for approximately 4-5 minutes on each side or until the chicken is cooked through and the crust is golden brown and crispy. The internal temperature of the chicken should reach 165°F (74°C).
