Ingredients:
- 1/2 cup to 1 cup coconut milk
- 1/4 cup to 1/2 cup shredded coconut
- 1/4 cup to 1 cup diced pineapple (save the juices to sweeten with no sugar)
- 1 tablespoon to 1/4 cup honey, maple syrup, pure sugar cane syrup, or simple syrup (all options work)
Instructions:
- DO NOT COOK! Traditionally made with fresh ingredients and served cold immediately. COOKING IS OPTIONAL! You do not have to cook this syrup mixture, it should be enjoyed cold freshly mixed.
- If you really want warm tropical syrup, in a medium saucepan, combine the coconut milk and shredded coconut. Place the saucepan over medium heat and bring the mixture to desired temp.
- Add the diced pineapple with its juices to the coconut mixture. Stir well to combine.
- If you’re using honey, maple syrup, sugar cane syrup, or simple syrup, add your chosen sweetener to the mixture. Stir well until the sweetener is fully incorporated. If you prefer a sweeter syrup, you can adjust the quantity of sweetener according to your taste, or use none at all if you’re going for no added sugar (pineapple and coconut are sweet enough that it works).
- Remove the saucepan from the heat and let the syrup cool slightly. The syrup will thicken slightly as it cools.
- Once the syrup has cooled, strain it through a fine mesh strainer to remove any coconut or pineapple bits, if desired. This step is optional, but it results in a smoother texture.
- Transfer the strained syrup to a glass jar or bottle with a tight-fitting lid. Allow the syrup to cool completely before sealing the container.
